Mexico issued sanitary standards and regulations for grains, cereal flours, and their products
"Sanitary Specifications and Regulations for Grains, Cereal Flours and Their Products". This standard establishes hygiene requirements and specifications that must be met by grains, cereal flours, semolina or farina, and products derived from cereals, edible seeds, flours, semolina or farina or their mixtures, as well as bakery products. These include microbiological limits, contaminant thresholds, product classification, nutritional fortification requirements for wheat flour and nitrified corn flour, and labeling specifications.
